How cute is she?!? If you’re looking for a last minute, healthy(ish), and festive dessert for tomorrow—this personal pumpkin pie is IT. Whipped this up on a whim with ingredients I had lying around and it far exceeded my expectations 😋🥧
Ingredients:
-Pre-made mini graham cracker pie crusts (or crush up some grahams with your liquid fat of choice)
-80g pumpkin purée
-1 egg
-1/6 cup unsweetened almond milk
-1/6 cup sugar free liquid sweetener of choice (I used maple syrup)
-1 tsp pumpkin pie spice
-1 dash salt
-1 dash vanilla extract
Bake at 350 for 50 mins
*makes 4 mini pies
